All the flavour comes from the yeast in this one, no bananas were harmed in the making of this beer. Step mashed to enhance characteristics of the yeast, particularly the banana esters. Minimal hops and a boat load of carbonation, just in time for summer.

Yeast

Produces high amounts of isoamyl acetate which is perceived as a banana flavour balanced with less dominant aromatics of apple, clove and plum. The esters are more dominant at high temperature and at lower pitches. Leaves a crisp finish, raising the temperature can increase banana flavour.
